Cook up a batch of Christmas memories

WHEN it's starting to feel a little like Christmas around our household, it's time to start creating and baking some beautiful tasty items that take us back to our childhood.

There's nothing quite like shortbread at Christmas time.

We remember our Nana always buying us a tin of shortbread - she used to wrap them up and they were the best thing in the world... when we think back to it now - even more so!

I am so pleased they still do have these tins of shortbreads nowadays - but I don't think they are the same.

It brings back great Christmas memories.

We want Emmy to have memories like these also and there is nothing quite like making your own shortbread and filling the house with beautiful warming smells.

It's a lot of fun also with little ones and Emmy loves helping.

Making memories are the best!

The recipe we have included here can be made as a whole shortbread or can be cut with cooking cutters into shapes for the little ones - they'll love it.

We hope you love this recipe - we use fresh thyme from our garden.

Recipe - Lemon thyme shortbread



120g unsalted butter

55g caster sugar

3 tbs lemon thyme, leaves only

Zest of 2 lemons

100g plain flour

70g rice flour

Extra caster sugar for dusting



1. Preheat oven to 150 degrees

2. Beat sugar, butter, lemon zest and thyme leaves together until pale and creamy

3. Beat in flour until a stiff dough forms

4. Scrape out of bowl and into a pre-oiled and lined rectangle tray or rectangle fluted tray

5. Press down firmly and work out to edges, then smooth. Work quickly as butter will begin to melt.

6. Bake in oven for 15-20mins or until edges are just golden.

It's to be a pale colour not golden brown and a little soft to touch.
