OPENING a cafe was a natural progression for Mt Marshall 'foodie' Jackie Robertson.

Famed for her internationally renowned Frog and Swallow preserves, Mrs Robertson opened the doors to her Frog and Swallow cafe in Allora's Herbert St last week.

Describing the opening of the cafe as a 'mammoth effort', the passionate food fanatic said she was determined to bring tourist dollars to Allora.

"I wanted to offer Allora something that's not around here," she said.

"I'm determined to put this end of Herbert St on the food tourism map."

There were just 17 days between first inspecting the vacant number 72 and opening the cafe for Mrs Robertson, who has declared the first week of trading as a 'whirlwind'.

"The place had to be cleaned from floor to ceiling," she said.

"Luckily the furniture was here and the main kitchen equipment too - it took a huge weight off our shoulders."

The menu at Frog and Swallow features seasonal, wholesome foods made lovingly from scratch by Mrs Robertson.

When describing her menu, the creative Mt Marshall cook used the words good, honest, great-tasting and real.

"I've been a cook all my life feeding my husband and three sons," she said.

"As a foodie if I don't like it - I won't serve it."

Living by the motto 'Choose, Prepare, Cook and Preserve', Mrs Robertson believes only in using seasonal fruit and vegetables full of flavour and at their peak.

While the menu isn't huge, the range of foods at Frog and Swallow is different - and the chef herself defies anybody to read the menu and not find something they would like.

"We have breakfast specials every day and cakes made by me," she said.

"We're also serving top quality Italian coffee - I can safely say the best cup of coffee between Toowoomba and Stanthorpe."

The 'real coffee' as dubbed by the cafe owner is made by her barista husband John and is served in Italian size cups.

"We have regulars every morning who love the way we serve our coffee and the sizes," she said.

"My husband John is producing consistent coffee over and over again."

With big plans for the future, Mrs Robertson is eagerly looking forward to expanding into hosting events.

"I intend once a quarter to hold preserve cooking classes," she said.

"Once a month on a Friday we'll have a long table share meal for 24 people."

Frog and Swallow Cafe is open Tuesday - Friday from 8am - 4pm, Saturday from 8am - 3pm and Sunday from 8am - 2pm.
